Frozen Fruit Filling
Here is the recipe that we use for our homemade fruit on the bottom yogurt. Any frozen fruit will work with this recipe. I always do 3 pounds of fruit at a time, and freeze what I don't need. Because I end up freezing it, I use potato starch to thicken. Fruit fillings thickened with potato starch tend to freeze and thaw better than those thickened with cornstarch, and are less prone to separating or becoming gummy. Cornstarch can be used, but possibly less will be needed.
Our gallon of yogurt we make each week will usually give us around 20 single servings of yogurt with fruit. We like to use the 8 oz glass mason jars for those. This recipe would also work great for pudding parfaits, served over ice cream or even filling in a layer cake.
Prep Time: 5 min
Cook Time: 10 min, maybe less.
Total Time: 15-20 minutes
Serves: Recipe makes as much or as little as you would like. I am writing this recipe for 3 pounds of fruit. You can certainly make less, and reduce other ingredients accordingly.
Ingredients:
- 3 pounds of frozen fruit
- 1 cup of brown or white sugar, less or more as desired to taste
- ¼ cup of lemon or lime juice. We used bottled.
- ¼ cup potato starch
- 2 cups cold water
- 1 Tblsp. vanilla, or measure with your heart
Directions:
- Dump all fruit, sugar, lemon and vanilla into a stock pot and heat to boil. As the fruit thaws, mash it up with a potato masher. If you want it really smooth you could use an immersion blender.
- While your fruit is coming to a boil, whisk the potato starch and cold water together in a bowl until it is smooth. A fork works just fine for this.
- Once your fruit has a good simmer going, whisk your potato starch once again. While stirring the fruit briskly, add the potato starch slurry to the fruit. It will thicken very fast! Mix vigorously and remove from the heat right away.
- Allow it to cool down, and then use as desired. Freeze any remaining in a ziploc freezer bag. Squeeze out any air and smooth it flat
