Finnish Kropsua or Pannukakku (Pancake)

Finnish Pannukakku

In many countries you will often find an oven pancake on the menu. A commonly known oven pancake is the German Pancake, or Dutch Baby. In Finland, the oven pancake is called Kropsua, or Pannukakku. We used Bob's Red Mill 1 to 1 All Purpose Flour to make this Finnish Pannukakku, but other gluten free flour blends should work just fine.

  • 1 cup milk
  • 4 eggs
  • ½ tsp vanilla extract
  • 1 cup GF all‐purpose flour OR 1 ½ cups regular wheat flour
  • ½ tsp salt
  • ¼ cup white sugar
  • 1 cup cup butter to melt in baking pan, NOT FOR BATTER

Directions:

  1. Mix your batter in a medium bowl by combining the milk, eggs, vanilla, flour, salt and sugar.
  2. Whisk very well until no lumps remain. Set aside. Gluten-free flour absorbs more liquid than wheat flour; it also takes longer to absorb liquid. This is why we use less gluten-free flour. Letting the batter sit for anything gluten-free lets it absorb more liquid with less chance for graininess. Up to 30 minutes.
  3. When batter is ready for baking, place your metal oven-safe baking dish onto the middle rack of your oven and preheat the oven to 425 degrees. I used a 10 x 10 square cake pan in my ninja oven.
  4. Once the temp is up to 425, toss butter in the hot pan, still in the oven, and let it melt. Close the door. When melted, swirl the butter around the bottom of the pan. You want to keep the oven door shut; open quickly when needed.
  5. Now that the butter is melted and sizzling, pour the batter into the hot pan and quickly put back in the oven. The high heat is where you get the puff.
  6. Bake for 25 to 30 minutes, or until set, very puffy and deep golden brown on the top edges.
  7. Check it at about 15 minutes. If it's too brown on top for your liking, place a sheet of foil loosely over the top to prevent further browning and then let it cook a few more minutes, until set. We like it darker in spots for crispy edges, so we let it get dark.
  8. Remove from the oven. The pancake will deflate. Once deflated and while still warm, cut into squares and remove to serving plates. Top as desired.
