Bulk Meatloaf For Freezer Meals - A Work In Progress

Give me your ideas! This recipe is NOT the best meatloaf! It's not bad, but I am looking for input on GOOD meatloaf. My mom made good meatloaf, and she never followed a recipe. She just eyeballed it. I don't make it often, because my eyeballing was not good, and many recipes we tried just didn't hit the mark.

We used about 8 pounds of ground beef for this recipe. We got 8 containers for the fridge, and one meatloaf roughly the same size to bake off for today. Next time I make this, I will increase all the spices, and maybe even cook up the homemade ketchup first. I want to have a good recipe for that anyways! We will be growing lots of tomatoes this year. I will also add alot more veggies, but will precook them to get any liquid out of them.

Ingredients:

• 8 pounds Ground Beef
• 1 dozen eggs
• 2 - 1 pound 4 ounce bags of frozen pepper onion mix
• 1 - 10 ounce bag of shredded carrots
• 6 Tbsp. garlic powder
• 2 Tbsp. salt
• 1 Tbsp. pepper
• 6 Tbsp. Worcestershire sauce

Mix well. Go ahead and use your hands. You could use a heaping 3 cups of actual ketchup here. A can of crushed tomatoes is much cheaper, is all. Form a well where you will recreate ketchup in this well. In this well, mix up the following in the well before blending into the entire meat mixture:

• 1 28 ounce can of crushed tomatoes
• 1/4 cup vinegar
• 2 Tbsp. brown sugar
• 6 Tbsp. honey mustard


1. Mix this up really good with your hands.
2. Once finished, pan up anything you want to bake off today, and the rest can be packaged for the freezer. You could use Ziploc bags. We like the containers, since you can run it under hot water and the meatloaf drops out already formed. Bake from frozen. You could even use foil pans that are ready to go in the oven.
3. To bake a frozen raw meatloaf, preheat your oven to 350 degrees and bake it for about 1.5 to 2 times longer than a non-frozen meatloaf of the same size, or until the internal temperature reaches 160 degrees.
4. You could also thaw it for baking as a loaf or use for meatballs.
5. Bake time for a thawed meatloaf is 350 for about 50 minutes. Glaze with ketchup or bbq sauce and broil to desired appearance.
