Kevin's Magic Mashed Potatoes

These magical mashed potatoes are the BEST! They are super smooth and creamy. The secret is gently simmering the potatoes in just the right amount of milk and NOT draining them. This lets you keep all the starch from the potatoes. We use organic red potatoes or yukon golds, as they are a bit more waxy than a russet potatoes, and our sensitive tummies find the easier to digest. It is simply a preference. Russet potatoes are a bit mealier, so the result may not be as smooth, but you could try them and let us know how it goes!

The following measurements are approximately what we use; adjust to your dietary and taste preferences. Kevin also uses other herbs beyond what is listed below to flavor these. Thyme, rosemary, marjoram to name a few; get creative and enjoy! They are so good you don't even really need gravy, yet gravy is always appreciated.

This recipe is written at 1 pound of potatoes for 2 people. Increase everything accordingly for each pound of potatoes you use.

Ingredients:

  • 1 pound Organic Red or Yukon Gold Potatoes Or however many pounds you need.
  • 1 1⁄4 cups WHOLE Milk Per pound of potatoes
  • 4 Tblsp Butter Per pound of potatoes
  • 2 Tsp Garlic Powder Per pound of potatoes
  • 1 Tblsp Dried or Fresh Parsley Per pound of potatoes
  • 1⁄4 Tsp Pepper Per pound of potatoes
  • 1 Tsp Salt Per pound of potatoes

  • Directions:

    1. Peel potatoes if you wish. Then cut into roughly 1 inch chunks.
    2. In a large saucepan or pot, combine the potatoes, milk and salt. Bring to a simmer over medium, then reduce to low. Simmer uncovered, stirring often, until the potatoes are beginning to fall apart and most of the milk has been absorbed. This will take 30 to 40 minutes.
    3. Once cooked to desired consistency, mash well by hand or with a hand mixer. Then add the rest of the ingredients listed and any additional herbs you would like.
