Broccoli Apple Salad

Broccoli and Apple Salad

This is a large batch recipe! We like to make a big batch for meal prepping that will last all week. You could certainly halve this recipe. Because we use it as a meal prep to last the week, some ingredients that are typically mixed into this kind of salad get a soggy or slimy texture by the end of the week. To avoid this we layer them on top of each prepped serving if its to go, or we add them when the salad is eaten. This also allows for a more customized salad for everyone.

Another option is that you could replace some of the broccoli with drained and rinsed beans or chickpeas, shredded carrots, diced cucumber (the salad/pickling type hold up best) or even finely diced radishes. We tend to mix it up here and there. We hope you enjoy!

Veggies and Such Ingredients:

  • 3 pounds of Fresh Broccoli, cut into small pieces
  • 1 Large Red Onion, Diced
  • 4 Large Apples, Diced
  • ¾ Cup Roasted Pepitas
  • ¾ Cup Roasted Shelled Sunflower Seeds

Dressing Ingredients

  • 4 cups total of Mayo and ⁄ or Plain Yogurt. We like to use half and half.
  • 1 cup of Apple Cider or desired vinegar
  • 1/4 to 1/2 cup of sugar or other sweetener
  • 1 Tblsp. Salt
  • ½ Tblsp. Pepper
  • 1 Tblsp. Garlic Powder
  • 1 Tblsp. Onion Powder
  • 2 Tblsp. Parsley

Suggested Toppings

  • Real Bacon Bits
  • Shredded or Cubed Cheese
  • Crumbly Cheese, any variety such as feta, gorgonzola or blue cheese
  • Raisins or Craisins

Directions:

  1. Slice and chop all veggies and apples into a large mixing bowl.Toss in pepitas and sunflower seeds.
  2. Mix up all the dressing ingredients into another bowl.
  3. Stir dressing into broccoli mixture.
  4. Pour dressing over broccoli mixture and mix well.
  5. You can chill the salad in the fridge for a bit to let the flavors meld, or you can serve it right away.
  6. We do the suggested toppings buffett style. This is a large batch for the week, and we found that the toppings get a soggy or slimy texture by the end of the week.
